Ingredients:

For the Outer Dough:
  • 1 cup all-purpose flour (maida) – for a crispy, golden shell
  • ½ cup whole wheat flour – for a subtle nutty flavor
  • 2 tbsp semolina (rava) – adds extra crunch
  • A pinch of salt – to balance the dough
  • 2 tbsp ghee (clarified butter) – for binding
  • Water, as needed – to form a firm dough
  • Oil, for deep frying – use Shivanya’s refined oil for best results
For the Dry Fruit and Coconut Filling:
  • 1 cup freshly grated coconut – desiccated by light roasting
  • ½ cup khoya (mawa or milk solids) – try Shivanya’s premium khoya for creamy richness
  • ¼ cup cashews, finely chopped – for a delightful crunch
  • ¼ cup almonds, finely chopped – adds depth and texture
  • ¼ cup raisins (kismis) – for natural sweetness
  • ¼ cup charoli (almondette/chironji nuts) – for a nutty, aromatic touch
  • ¼ cup sugar – for balanced sweetness
  • ½ tsp cardamom powder (elaichi) – for aromatic warmth
  • ¼ tsp nutmeg powder (jayfal) – for a spicy note
  • 2 tbsp ghee – for sautéing
  • Optional: A pinch of saffron strands – for a luxurious touch
For Garnishing:
  • Shivanya’s edible silver dust – for a festive flourish (optional)

Instructions:

Prepare the Dry Fruit and Coconut Filling:
  1. Lightly roast the grated coconut in a dry pan over low heat for 2–3 minutes to desiccate, stirring to avoid browning. Set aside to cool.
  2. In a non-stick pan or kadai, heat 2 tbsp ghee over low heat. Add chopped cashews, almonds, and charoli (almondette), sautéing for 1–2 minutes until golden and fragrant.
  3. Stir in raisins and cook briefly until they plump up.
  4. Add the desiccated coconut, khoya, and sugar. Stir for 3–4 minutes until the sugar melts and blends with the coconut and khoya, forming a cohesive and aromatic mixture.
  5. Mix in cardamom powder, nutmeg powder, and saffron (if using). Remove from heat and let cool completely.
Prepare the Outer Dough:
  1. In a large bowl, combine all-purpose flour, whole wheat flour, semolina, salt, and ghee. Rub until the mixture resembles coarse breadcrumbs.
  2. Gradually add water and knead into a firm, smooth dough. It should be pliable but not sticky.
  3. Cover with a damp cloth and let rest for 20–30 minutes to ensure easy shaping.
Shape and Fill the Modaks:
  1. Divide the dough into 12 equal portions and roll into balls.
  2. Flatten each ball into a 4-inch disc, keeping the edges slightly thinner than the center.
  3. Place 1–2 tsp of the cooled filling in the center.
  4. Pleat the edges carefully and pinch them together to seal, forming the classic modak shape with a pointed top.
Fry the Modaks:
  1. Heat oil in a deep kadai over medium heat. Test by dropping a small piece of dough; it should sizzle and rise.
  2. Fry the modaks in small batches for 4–5 minutes, turning gently, until golden and crispy.
  3. Remove with a slotted spoon and drain on paper towels.
Serve:
  • Sprinkle with Shivanya’s edible silver dust (if using) for a festive touch.
  • Serve warm as an offering to Lord Ganesha or enjoy with family and friends.
Pro Tips:
  • Use Shivanya’s premium cashews, almonds, and khoya from Shivanya Enterprises for authentic flavor and quality.
  • If the filling feels too dry, add a teaspoon of milk while sautéing; if too moist, cook longer to evaporate excess moisture.
  • For beginners, try a modak mold (available at our WooCommerce store) for perfect shapes.
  • Store fried modaks in an airtight container for up to 3 days or freeze uncooked modaks for later frying.
