No-Bake Mango Cheesecake: A Perfect Summer Dessert
Introduction:
Mangoes are the highlight of Indian summers, and what better way to enjoy them than in a creamy, refreshing, no-bake mango cheesecake? This dessert is perfect for summer celebrations or as a delightful treat for mango lovers. Ingredients:
For the Crust:
- 1 ½ cups digestive biscuits (crushed)
- ¼ cup unsalted butter (melted)
For the Cheesecake Filling:
- 1 ½ cups cream cheese (room temperature)
- 1 cup whipping cream (cold)
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh mango puree (or Shivanya’s canned mango pulp)
- 2 teaspoons gelatin (or agar-agar for a vegetarian option)
- ¼ cup warm water
For the Mango Glaze (Optional):
- ½ cup mango puree
- 1 teaspoon gelatin (dissolved in 2 tbsp warm water)
- 1 tablespoon powdered sugar
Instructions:
Prepare the Crust:
- Crush the digestive biscuits into fine crumbs using a food processor or rolling pin.
- Mix the crumbs with melted butter until it resembles wet sand.
- Press the mixture firmly into the bottom of a springform pan (6 or 7 inches).
- Chill in the refrigerator for 15–20 minutes while preparing the filling.
Mix the Cheesecake Filling:
- In a small bowl, dissolve gelatin in warm water. Let it sit for 5 minutes to bloom.
- In a large mixing bowl, beat cream cheese and powdered sugar until smooth and creamy.
- Add vanilla extract and mango puree, mixing well.
- In another bowl, whip the cold whipping cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Heat the bloomed gelatin for 10 seconds in the microwave (or until melted), then mix it into the filling.
Assemble & Chill:
- Pour the mango cheesecake filling over the prepared crust, smoothing the top.
- Refrigerate for at least 4–6 hours (or overnight for best results).
Prepare the Mango Glaze (Optional):
- Dissolve 1 teaspoon gelatin in 2 tablespoons warm water.
- Mix it with ½ cup mango puree and 1 tablespoon powdered sugar.
- Pour the glaze over the set cheesecake and refrigerate for 1 more hour.
Decorate & Serve:
- Once fully set, carefully remove the cheesecake from the pan.
- Garnish with fresh mango slices, Shivanya’s edible decorations, or a dusting of powdered sugar.
